    Wow, did you notice how good my bus makes those folks look?

    He Triple, how can my bus be lonely with all those good folks there to pay homage? I sure hope Jeff put out the donation Jar! As though I’d see any of it! But that’s a great shot Triple and I sure thank you for posting it! I love that bus!!!

    As far as paying off Jeff that is something of a dilemma. I’ve been saving my checks from the local Burger King where I’ve been flipping burger for the last few months. My hope is my burger money combined with tearing up in his office will work for me!

    Have you noticed that Jeff’s profile shot and that of the Burger KING share a real likeness? That’s going to cost me and what a terrible time for my backspace key to go out…

    OK, you decide… Take away the Burger King hat and you tell me who that is? I’m thinking it may be the likeness to Jeff that made me decide to flip burgers there? A subliminal message, WoW!

    Easy Gumbo Recipe (Instant Pot recipe)

    15 minPrep Time

    45 minCook Time

    1 hrTotal Time

    Ingredients

    • 1 pound Andouille Sausage, cut into 1/2” slices
    • 1 pound chicken thighs, cut into 1-2” pieces or chicken breasts
    • 1/4 cup + 1 Tablespoon avocado or olive oil
    • 1/2 cup white whole wheat flour
    • 1 Tablespoon Cajun Seasoning
    • 1 Tablespoon Dried Thyme
    • 1 1/2 teaspoons Smoked Paprika
    • 1 Large Onion, chopped – half of onion we thought was enough.
    • 1 Bell Pepper, chopped
    • 3 Celery Stalks, chopped
    • 4 Garlic Cloves, chopped – I did not use
    • 2 Quarts Chicken Stock
    • 2 cups Tomatoes, Diced – I used one can of diced tomatoes
    • Sea Salt and Black Pepper to taste
    • 3 cups cooked rice

    Instructions

    1. Set pressure cooker to sauté and heat 1 tablespoon of oil.
    2. Once oil is hot, add the sausage and brown (without the lid) on both sides, about 5 minutes.
    3. Remove the sausage to a plate being sure to leave oil/drippings in the pan.
    4. Add the cut chicken thighs to the pot and brown on both sides, about 6 minutes.
    5. Remove chicken and add to the plate with the sausage.
    6. Add remaining 1/4 cup of oil, flour, Cajun seasoning, thyme, and smoked paprika to the pot.
    7. Stir constantly and cook until the roux is the color of peanut butter, about 5 minutes.
    8. Add onion, bell pepper, celery, and garlic to the darkened roux.
    9. Cook, stirring often, until vegetables are soft, about 5 minutes.
    10. Return the cooked Andouille sausage and chicken to the pressure cooker.
    11. Add chicken broth and diced tomatoes to the pressure cooker.
    12. Stir well to combine being sure to remove anything sticking to the bottom of the pot.
    13. Add the pressure cooker lid and bring to pressure.
    14. Cook for 15 minute on manual setting and then allow to naturally release for 15 minutes.
    15. Release any remaining pressure and remove the lid from the pressure cooker
    16. Taste the gumbo and add, as needed, sea salt and black pepper.
    17. To serve: place a 1/2 cup of white rice in a bowl and top with gumbo.

    Awesome seminar! Touched base with Ann & Andre and Mike & Karen from the Driggs event and met so many more good folks all having a good time.

    Special thanks to Jeff for hosting and Jon and Tom for organizing the event. Thanks to Bill Jensen for all the Prevost knowledge, and shout out to Buddy and Fred for all the extras and all the Ladies that kept us in check!

    Harry did show up, and Dan since we kept the rift raft out is was a calm and quite crowd. Wish you could have been there, caught up with old friends and met a bunch on new friends. Dan, hope you and the Red head find a new coach soon, and see you down the road.
